It's Wildflower Wednesday here on the Blog! Today's flower is one of my favorites but hard to catch for me. It is Western Salsify or Goat's Beard. It is in the Sunflower family and closes up in the heat of the day. When it goes to seed it resembles a very large Dandelion. It's roots are edible and are said to taste like Parsnip.

It's Wildflower Wednesday here on the Blog! Today's flower is one that usually can only be seen if you are a morning person. This is Western Salsify or Goat's Beard. The flowers close up by around noon on a sunny day. After the flowers fade they get a head on them like a giant Dandelion. The name Goat's Beard refers to the bristly top of each achene or seed head.
